The Best French Toast Brekkie

This honey, banana and blueberry French toast (or eggy bread, depending on where you're from!) is a sweet and satisfying option for those looking to elevate their breakfast with a bit of indulgence.

Perfect for a cosy weekend morning, this recipe is a delightful way to use up ripe bananas, adding a natural sweetness to every bite.

Ingredients

  • 6 British Free Range Eggs, Medium
  • 1 pint Semi-Skimmed Milk
  • 3 tbsp Clear Honey (plus extra for drizzling)
  • 8 slices of White Bread (you can use other bread, but for the perfect fluffy texture white sliced is best!)
  • 1 tbsp Flavorless Oil (such as vegetable or sunflower oil)
  • 2 Bananas, thinly sliced into rounds
  • 1 punnet of blueberries

Method

  1. In a shallow dish, whisk together the eggs, milk, and 1 tablespoon of honey. Place the bread slices in the mixture and let them soak for a couple of minutes on each side, ensuring they absorb the egg mixture evenly.

  2. Heat 1 tbsp oil in a non-stick frying pan over medium heat. Lift 2 slices of soaked bread carefully from the egg mixture and place them in the hot pan to fry each slice for about 3 minutes on each side, or until golden and crisp. Pop them on a warm plate while you cook the remaining slices.

  3. Top each serving of French toast with lashings of honey, a handful of blueberries, and banana slices. Serve immediately and enjoy!
